Older Designs v. Innova's Award Winning Design
Stainless steel is easier to care for than aluminum and can maintain its appearance for a very long time. Stainless steel cookers cost more than the aluminum models, but are substantially better built with more safety features. Features on the Innova include the easy to use steam release button, a red safety button which pops up to indicate internal pressure, two cooking pressures and the solid 18/10 stainless side construction and stainless/aluminum clad bottom for even heat distribution.
The cooker heats quickly and maintains temperatures easily. As compared with older style aluminum pressure cookers, the Innova heats faster and retains heat a LOT better, allowing you to literally turn the burner down to the lowest setting once pressure has built up in the cooker. You will also discovered that your cooking times will decrease due to the even heat distribution as well as the higher cooking pressure (15lbs.) available in the Innova.
The pressure regulator lets you hear that it is at the appropriate temperature. The safety lock release enables you to more hurriedly release pressure - very helpful feature if time is short. With some brands you have to put the entire pot in the sink and run cold water over it to cool it down. With the Innova you simply remove the pot from the heat and press a button on the cover/handle to s-l-o-w-l-y release the steam pressure.
The Innova is easy to lock and unlock. Some other brand pressure cookers are not as easy to operate. There is a red button that pops up to let you know that pressure is building in the pot. The pot has a long handle and a small helper handle that is very handy for lifting/pouring.
The cooker is heavy, solid feeling with handles that are comfortable and heat resistant. The cooker contains a footed steaming basket - a definite improvement. (Pulling out hot steamer plates with no handles is awkward and risky). The optional second lid (for non-pressurized cooking) is also a nice feature. The lid inserts easily, and closes smoothly.
A pressure cooker can only be filled to about 1/2 to 2/3 full, so if you are in doubt what size to get, we recommend one size larger than what you think you need.
